Lemony Courgette & Pea Lasagne

Any lasagne that is a one pot prepared dish gets a big tick in my book. This recipe is inspired by a recipe I found on Ocado.  I have cut down on the onion & garlic from the original recipe as I am a bit sensitive to these so you can double both of these ingredients if you are good with them.  This is a perfect recipe for Autumn or Spring – it’s light but still comfort food as its best.
I made this in September and courgettes are abundant!

Herb Verde with Mediterranean Tonic

A fresh herbaceous spritz to pair with this delicious courgette lasagne

You’ll Need

For the lasagne sauce

  • 1 tbsp olive oil
  • 1/2 onion finely chopped
  • 1 garlic clove
  • 2 medium-large courgettes – 1 finely chopped and 1 in either ribbons or thin slices
  • 250ml milk
  • 250ml vegetable stock
  • 4 tbsp frozen peas
  • 150g garlic & herb Boursin

To make up the lasagne:

  • 6-7 lasagne sheets* dried or fresh but dried will take longer to cook
  • 2 tbsp parmesan cheese
  • 125g mozzarella sliced or grated
  • 1 lemon: zest and juice
  • 1 tbsp Greek basil or basil

Making & Pairing

  1. Fry the onion, garlic & 1 x chopped courgette
Put to oven on to pre-heat to 190°C or 374°F.  Whilst this is heating, gently fry your onion, garlic and the chopped courgette to soften in an oven/hob proof pan. You don’t want to brown so keep the heat low.
  2. Add the milk & stock to the sauce mixture
Add the milk and stock to the mixture, bring to a simmer.  Break up the lasagne sheets into smaller sections and add to the mixture.  cook for 8-10 minutes until they are beginning to soften (al dente – firm but chewy).  Stir to prevent sticking.
  3. Add the Boursin, courgette & peas
Break up and add the Boursin to your lasagne mixture. Add the peas and courgette slices or ribbons.  mix and cook for 2-3 minutes then stir in the parmesan, basil, most of the lemon zest and juice.  Top with the mozzarella and pop in the oven for 15-25 minutes* until its bubbling and the lasagne and veg feel cooked. *dried is likely to take the longer time but check at 15 mins.
  4. To serve, drizzle on some extra olive oil and the rest of the lemon zest and serve with a crisp green salad or some green veg.

Serve with

A chilled glass of Herb Verde with Mediterranean Tonic

The freshness of this spritz cuts through the cheesy richness of the lasagne sauce but pairs with the sweet peas, courgette and herbs.
