Lemony Courgette & Pea Lasagne
Any lasagne that is a one pot prepared dish gets a big tick in my book. This recipe is inspired by a recipe I found on Ocado. I have cut down on the onion & garlic from the original recipe as I am a bit sensitive to these so you can double both of these ingredients if you are good with them. This is a perfect recipe for Autumn or Spring – it’s light but still comfort food as its best.
I made this in September and courgettes are abundant!
Jerk Chicken & Pineapple in a Bun
This is a Jamie Oliver Recipe I found whilst I was looking for a tasty barbecue dinner option but I didn’t want a beef burger which I find too heavy – I used boneless chicken thighs (I tend to buy these from Waitrose because they do them in a big 1kg container so plenty for a friends and family gathering. I think chicken thighs are much juicier than breast meat. If you can season & marinate the day before, it helps the flavour work into the meat. A delicious, easy & super tasty dinner.
Burrata Beauties
Creamy burrata, warm flatbreads and a spoonful of crunchy, aromatic chilli crisp – this is indulgent, vibrant food at its very best. Soft, milky burrata meets nutty peanuts, crispy shallots and chilli heat in a dish that’s all about contrast: cool and creamy, hot and crunchy, rich and lively.
This recipe was inspired by a dish we had at Fallow, then reimagined at home after discovering a brilliant version by Twisted – an awesome team of food creators worth following. It’s now one of my go-to sharing plates for informal entertaining.
Roasted Harissa Carrots with Houmous & Hazelnuts
This beautifully spiced carrot dish is inspired by the bold, generous flavours of Yotam Ottolenghi – sweet, earthy carrots roasted with rose harissa and cumin, layered over silky houmous and finished with toasted hazelnuts, pomegranate and fresh herbs.
It’s the kind of food that feels special but is secretly simple: big flavours, lots of texture, minimal fuss. Perfect for relaxed entertaining, midweek sharing or a table full of plates and good conversation.
Fish Tacos with Pickled Onions & Zesty Yogurt Sauce
These vibrant fish tacos are everything you want from relaxed, informal entertaining – bold flavour, loads of texture and plenty of hands-on fun at the table. Crispy, smoky white fish is wrapped in warm corn tortillas and topped with quick-pickled onions, crunchy cabbage, creamy avocado and a bright, limey yogurt sauce.
Light yet satisfying, this dish is ideal for sunny evenings, casual gatherings or any “make, chat, eat, repeat” kind of meal. It also works beautifully as a vegetarian option – simply swap the fish for firm tofu and treat it exactly the same way.
